We know that the sun's energy is stored in plants and as coal, oil and gas etc. But the big problem for us humans seems to be harmlessly and efficiently storing the sun's energy to convert to electrical energy. Any ideas?

There are many ways to indirectly store solar energy.
1) by pumped storage as at Dinorwig
2) in batteries.
3) by growing crops of wood or other fuels, later burnt on demand.

Other possibilities exist that are not actual storage, but that achieve the same effect, including;
Use the renewable energy as it is produced but store the products manufactured thereby. E.G. mill grain into flour when power is plentiful and store it.
Use differential pricing to encourage the shifting of consumption to those times when power is plentiful.
Use fossil fuel only at times of insufficient renewable supply, rather than as base-load.
